Instructions:

1. Make the Dough for Gulab Jamun

Mix Dry Ingredients: In a large mixing bowl, combine 1 cup milk powder, 1/4 cup all-purpose flour, 1/4 teaspoon baking soda, and 1/4 teaspoon cardamom powder.
(480 calories from milk powder, 114 calories from all-purpose flour, negligible calories from baking soda, 2 calories from cardamom powder)

Add Ghee: Add 2 tablespoons ghee (clarified butter) into the dry mixture and mix it well with your fingers until the mixture resembles breadcrumbs.
(240 calories from ghee)

Add Warm Milk: Gradually add 1/4 cup warm milk to the dry ingredients and ghee mixture. Mix gently to form a soft, smooth dough. If the dough is too dry, add a little more warm milk, 1 tablespoon at a time.
(38 calories from milk)

Rest the Dough: Cover the dough with a damp cloth and let it rest for 10-15 minutes to soften.

2. Make the Sugar Syrup

Prepare the Syrup: In a saucepan, add 1 cup sugar and 1/2 cup water. Stir well and bring it to a boil over medium heat.
(774 calories from sugar)

Add Cardamom and Rose Water: Once the syrup starts boiling, add 1/4 teaspoon cardamom powder, 1 teaspoon lemon juice, and 1 tablespoon rose water or kewra water (if using). Stir the syrup well and let it simmer for 5-7 minutes until it becomes slightly thickened.
(2 calories from cardamom powder, 1 calorie from lemon juice, negligible calories from rose water)

Keep Syrup Warm: Once the syrup is ready, turn off the heat and keep it warm.

3. Shape the Gulab Jamuns

Shape the Dough: After the dough has rested, divide it into small, smooth balls (about 1 inch in diameter). Ensure there are no cracks on the surface of the balls, as cracks can cause them to break while frying.
(No calories added here.)

4. Fry the Gulab Jamuns

Heat Oil or Ghee: In a deep frying pan, heat enough oil or ghee (about 2 cups) to completely submerge the gulab jamuns. Heat it on medium-low heat. The temperature of the oil should be around 325°F (165°C).
(2400 calories from oil/ghee, depending on the amount absorbed during frying)

Fry the Gulab Jamuns: Gently drop the shaped balls into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry them until they puff up and turn golden brown, which will take about 5-7 minutes. Keep turning them gently to ensure even frying.
(No calories added here during frying; the amount of oil absorbed will vary.)

5. Soak the Gulab Jamuns

Soak in Syrup: Once fried, remove the gulab jamuns with a slotted spoon and immediately place them in the warm sugar syrup. Let them soak in the syrup for at least 30 minutes so they absorb the syrup and become soft.
(No calories added here.)
