2 cups whole wheat flour (freshly milled from wheat grains)

4 medium potatoes, boiled and mashed

1 small onion, finely chopped

2 fresh green chilies, finely chopped

2 tbsp fresh coriander leaves, finely chopped

1 tsp roasted cumin powder (made by grinding roasted cumin seeds)

½ tsp red chili powder (ground dried red chilies)

½ tsp turmeric powder (ground dried turmeric root)

1 tsp salt or to taste

2 tbsp homemade butter or ghee for the dough and cooking

About ¾ cup water for kneading dough

Step 1: Prepare the Dough

In a large bowl, add whole wheat flour, a pinch of salt, and gradually mix water to knead a soft dough.

Add 1 tsp ghee to make the dough smooth and knead for about 5 minutes.
